To make the fresh Basil Pesto:
- 60 g of fresh basil
- 30 g of grated parmesan cheese
- 2 cloves of minced garlic
- the zest of 1 lemon
- 2 tsp of lemon juice
- 35 g toasted pine nuts, cashews or almonds – whatever you have or can afford
- 118 ml of olive oil
Add everything (except the oil) to a blender or food processor. (Our baby bullet works best.) Give it a quick blend just to “introduce” everyone to each other. Slowly add the olive oil and keep blending till all the ingredients start to combine with the oil. Taste your pesto and add some more garlic or lemon if you like.
* The pesto should last for a week when stored in an airtight container in the fridge. It can also be frozen. An ice cube tray makes good pesto portions, just remember to transfer the frozen pesto cubes to another freezer airtight container or bag.
